Hummus
Drew Keller, great hummus artisan, gave me this recipe to share. Enjoy.
Yield: 4 appetizer servings
Prep and cook time: 15 minutes
Ingredients:
- 2 pounds chick peas / garbanzo beans
- 3 fresh cloves of garlic
- 1/2 cup Tahini (sesame paste)
- 1/2 cup olive oil
- 1 teaspoon cumin
- 1 teaspoon ground pepper
- salt to taste
Directions:
- Blend everything but the chick peas until smooth.
- Add chick peas and blend until smooth.
- Add a little water and/or more oil as necessary to obtain the desired consistency.
- Serve with Calamta olives and warm pita.
