Hummus

HummusDrew Keller, great hummus artisan, gave me this recipe to share. Enjoy.

Yield: 4 appetizer servings
Prep and cook time: 15 minutes

Ingredients:

  • 2 pounds chick peas / garbanzo beans
  • 3 fresh cloves of garlic
  • 1/2 cup Tahini (sesame paste)
  • 1/2 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon ground pepper
  • salt to taste

Directions:

  1. Blend everything but the chick peas until smooth.
  2. Add chick peas and blend until smooth.
  3. Add a little water and/or more oil as necessary to obtain the desired consistency.
  4. Serve with Calamta olives and warm pita.
