Pan Fried Halibut with Corn and Roasted Potatoes

Pan Fried HalibutHalibut has lean, firm meat, with a mild but distinctive flavor. It can be pricey at times, but, it is worth it. I included roasted potatoes and corn for side dishes.

Yield: 2 servings
Prep and cook time: 35 minutes

Ingredients:

  • 1 pound fresh halibut
  • 4 red potatoes
  • 2 ears of corn
  • 1 lemon
  • olive oil
  • fresh parsley
  • fresh basil
  • dried oregano
  • salt
  • fresh cracked pepper
  • tablespoon of butter

Directions:

  1. Preheat the oven to 425°.
  2. Grease a baking sheet with olive oil.
  3. Peel and cut the potatoes into slices (about a 1/2 inch thick).
  4. Season both sides of the potatoes with salt, pepper and a dash of oregano.
  5. Place the potatoe slices on the baking sheet. Cook them in the oven for 15 minutes then flip the slices and cook for another 15 minutes.
  6. Husk the corn and place it in a large pot of salted boiling water for 5 minutes. After 5 minutes turn off the heat and keep the corn in the water until the potatoes are ready.
  7. Cut the halibut into two filets. Season with salt, pepper and chopped parsley.
  8. Heat up 2-3 tablespoons of olive oil in a pan and place the halibut into the hot pan. Cook for 5 minutes on each side. Squeeze a wedge of lemon over the halibut while cooking.
  9. Remove the corn from the water and cut off the kernels with a knife. Place the corn in a bowl and season with butter, salt, pepper and chopped basil.
  10. Dish up 2 plates with the roasted potatoes, seasoned corn and halibut. Slice up the rest of the lemon and use it for garnish. Enjoy.
