Pan Fried Halibut with Corn and Roasted Potatoes
Halibut has lean, firm meat, with a mild but distinctive flavor. It can be pricey at times, but, it is worth it. I included roasted potatoes and corn for side dishes.
Yield: 2 servings
Prep and cook time: 35 minutes
Ingredients:
- 1 pound fresh halibut
- 4 red potatoes
- 2 ears of corn
- 1 lemon
- olive oil
- fresh parsley
- fresh basil
- dried oregano
- salt
- fresh cracked pepper
- tablespoon of butter
Directions:
- Preheat the oven to 425°.
- Grease a baking sheet with olive oil.
- Peel and cut the potatoes into slices (about a 1/2 inch thick).
- Season both sides of the potatoes with salt, pepper and a dash of oregano.
- Place the potatoe slices on the baking sheet. Cook them in the oven for 15 minutes then flip the slices and cook for another 15 minutes.
- Husk the corn and place it in a large pot of salted boiling water for 5 minutes. After 5 minutes turn off the heat and keep the corn in the water until the potatoes are ready.
- Cut the halibut into two filets. Season with salt, pepper and chopped parsley.
- Heat up 2-3 tablespoons of olive oil in a pan and place the halibut into the hot pan. Cook for 5 minutes on each side. Squeeze a wedge of lemon over the halibut while cooking.
- Remove the corn from the water and cut off the kernels with a knife. Place the corn in a bowl and season with butter, salt, pepper and chopped basil.
- Dish up 2 plates with the roasted potatoes, seasoned corn and halibut. Slice up the rest of the lemon and use it for garnish. Enjoy.
